    Nghiên cứu này xem xét các yếu tố ảnh hưởng đến ý định mua thực phẩm có nguồn gốc từ côn trùng của người tiêu dùng tại thành phố Hà Nội. Dựa trên mẫu khảo sát 275 người tiêu dùng, phương pháp phân tích nhân tố khám phá và hồi quy được sử dụng nhằm xác định yếu tố ảnh hưởng đến ý định mua ba dạng sản phẩm: côn trùng nguyên dạng, thực phẩm từ bột côn trùng và thực phẩm được nuôi từ côn trùng. Kết quả cho thấy khi mức độ e ngại giảm một bậc trong thang đo Likert 7 bậc thì ý định mua thực phẩm từ bột côn trùng và thực phẩm được nuôi từ côn trùng tăng tương ứng khoảng 0,17 và 0,20 bậc. Ngược lại, cảm giác ghê sợ đối với thực phẩm côn trùng làm giảm ý định mua côn trùng nguyên dạng khoảng 0,27 bậc. Trong khi đó, mức độ quan tâm đến thực phẩm côn trùng làm tăng ý định mua côn trùng nguyên dạng và thực phẩm từ bột côn trùng lần lượt khoảng 0,36 và 0,35 bậc. Các yếu tố nhân khẩu học chỉ thể hiện ảnh hưởng hạn chế và không nhất quán giữa các mô hình. Nghiên cứu đề xuất các hàm ý chính sách nhằm thúc đẩy hành vi tiêu dùng thực phẩm từ côn trùng tại các nền kinh tế đang phát triển như Việt Nam.
