Nghiên cứu nhằm đánh giá ảnh hưởng của nhiệt độ bảo quản (4°C và 30°C) và chất mang (dextrose, lactose, skim milk và cám gạo) đến khả năng sống và hoạt tính protease của chủng Lactobacillus plantarum LAB8.1CM trong các chế phẩm dạng bột trong 90 ngày. Kết quả cho thấy ở 4°C, mật độ vi khuẩn ở các sản phẩm duy trì ổn định hơn so với bảo quản ở 30°C. Trong đó, skim milk cho hiệu quả bảo vệ tốt nhất ở 4°C với tốc độ suy giảm thấp chỉ 0,004 ± 0,002/ngày, trong khi ở 30°C, giá trị này tăng lên đáng kể với trung bình 0,05 ± 0,002/ngày. Ngược lại, dextrose cho hiệu quả bảo vệ thấp nhất với tốc độ suy giảm lần lượt 0,017 ± 0,002/ngày ở 4°C và 0,062 ± 0,001/ngày ở 30°C. Hoạt tính protease giảm dần theo thời gian bảo quản, tuy nhiên ở 4°C hoạt tính cao hơn gấp 2 lần so với 30°C. Đáng chú ý, kết quả không ghi nhận được sự khác biệt có ý nghĩa thống kê (P >0,05) về hoạt tính protease giữa các chất mang, cũng như tương tác giữa nhiệt độ bảo quản và chất mang (P >0,05). Nhìn chung, việc bảo quản ở nhiệt độ thấp kết hợp với chất mang phù hợp là yếu tố then chốt giúp duy trì khả năng sống và hoạt tính sinh học của chủng Lactobacillus plantarum LAB8.1CM trong chế phẩm vi sinh dạng bột.
